I feel like I wake up asking myself this question every morning. Does anyone else find it absolute hell to figure out whats for dinner? You can search recipes online, but there are millions of them, how are you supposed to narrow it down? It doesn't help that AJ is a super picky eater and is like a Tyrannosaurus Rex, he only likes to eat meat; no pasta, rice, vegetables, noodles, pancakes, waffles, fruit or anything sweet (so basically every time I bake, I eat it all, but he does like Oreos). So this is a gigantic challenge. I have been doing ok so far though...
I have taken to wandering around the meat section at the commissary and buying random cuts of meat. I then wake up in the morning and look at my selections and then find a recipe for it. So far we have had some pretty delicious London broil, some so-so Mexican chicken casserole and some not my favorite pork riblets.
I was pretty nervous about making a London broil, but did you know it only takes like 10 minutes to cook? Seriously 10 minutes. What is intimidating about that?? Nothing. I think this will be my new go to meat. You do need to make sure to marinade it in some type of acid to tenderize the meat, if not it could turn out tough.
The Mexican chicken bake was ok, but the chicken was bland. I think I am just not a big chicken fan. It seems like it is always bland...
I hated the pork riblets. I bought them because they were on sale. They are the little pieces that get trimmed off of a rack of ribs that are a square shape. They were all fat and tiny bones. Never again. I don't care if they are only $2.50.
Tonight we are having chili and grilled cheese. My best friend Bekah got us a griddle for my bridal shower and I am going to whip it out tonight to fry these puppies up! Hopefully they turn out good, I am going to put some tomato and onion on them.
My best friend in all of this meat cooking has been my Wilton Armetale large round tray, from Jeanne and Earl Evans, and bowl, given to us by Whitney and Matt Stead. I absolutely love these things and I am obsessed. They do so many things, but one of the things they do best is defrost meat. You just put your meat on the tray or in the bowl for 1-2 hours and it is completely thawed! I hate using the microwave to thaw things because I feel like it always drys out the meat, so basically I am in love. Ladies, if any of you out there are registering, you need these items! They make life to easy :)
Since my bridal shower and wedding, I can cook or bake anything I can dream up! Thanks for stocking us up everyone!
Next week we will be eating some meatloaf, it will be my first try, but I am armed with the best meatloaf recipe in town from Shirley Robson! We will also be having some pork country style ribs in the crock pot. My Papoo always called them snake ears... SO sneak ears for dinner next week!!
I will try to post more often but I don't really do very much since I don't know very many people here... I have made one new friend though, Jackie, (HAHA I knew you would read this)! We get to hang out while the husbands are doing Army type things. It sure is nice to have a new buddy though!

I AM NAMED DROPPED IN THE BLOG!!!!!!!!!!!!!! Glad the griddle has came in handy. Have you tried the syrup? Have you made a Brisket(sp)? It's meat, and it taste so good. Just another idea to help ideas for dinner :)
